Braised Turtle in Farmhouse Sauce
Raw material: 1 turtle (about 1500g) from Dongting Lake.
Seasonings: lard, 60g garlic, 20g scallions, 30g ginger, chili sauce (main flavor), soy sauce (color mixing), light soy sauce (seasoning), white sugar, black pepper powder, bullet head dry chili, Li Jinji flavor chili sauce (auxiliary flavor), millet sauce (thickened).
Method:
1. Slaughter the turtle, remove its skin, and chop it into small chunks. Wash and set aside. Cut the aged scallions into 4 cm long and 1 cm wide diagonal blades, blanch them, and place them in a container for padding.
2. Put lard in the pot and boil. Stir fry ginger until fragrant, then add turtle and stir fry until water content is high. When dry, pour into a sand pot, add all seasonings, and pour pure water over the surface of the ingredients. Cook for about 30 minutes. Add millet juice to collect the juice (the juice should not be too small), and finally taste it and put it into a container to serve.

Braised Bird's Nest with Cordyceps Juice
Ingredients: 125g Guanyan and 2 pieces of Cordyceps sinensis. Seasoning: Old soup (old chicken, pork, snail meat, wild duck, mineral water).
Method:
